1 ea Yellow Grapefruit-peeled and sectioned
1 pint Fresh Strawberries-stemmed and sliced
1/2 cup Honey
2 Tb Fresh Lemon Juice
1 tsp Fresh Ginger Root-grated as close as possible
to service time
1/4 cup Roasted Almonds
4 ea Mint Leaves


  1. In a medium bowl add all ingredients except almonds. Gently toss until evenly coated. Let chill for about an hour if possible.
  2. Scoop ingredients into desired dish.
  3. Sprinkle almonds on top.
  4. Garnish each dish with a mint leaf and serve cold.
