Roasted Almond Ginger Fruit Cup

1 ea Yellow Grapefruit-peeled and sectioned
1 pint Fresh Strawberries-stemmed and sliced
1/2 cup Honey
2 Tb Fresh Lemon Juice
1 tsp Fresh Ginger Root-grated as close as possible
to service time
1/4 cup Roasted Almonds
4 ea Mint Leaves
- In a medium bowl add all ingredients except almonds. Gently toss until evenly coated. Let chill for about an hour if possible.
- Scoop ingredients into desired dish.
- Sprinkle almonds on top.
- Garnish each dish with a mint leaf and serve cold.
