Green Bean & Basil Salad
Prep Time: 10 minutes Cook Time: 6 to 8 minutes Yields: 6 servings
1 1/2 lbs Cleaned Fresh Green Beans-cut into 2-inch pieces
1/2 cup Olive Oil
1/2 cup Red Wine Vinegar
1/2 cup Chopped Fresh Basil
1 cup Grape Tomatoes-cut in half
1 clove Minced Garlic
1/2 tsp Kosher Salt
2 ea Chopped Scallions
- In a medium saucepan add water and salt.
- Bring water to a rolling boil. Add green beans and let cook for no more than 6 minutes. Drain and immediately run cold water over beans. Let cool.
- Whisk oil, vinegar and garlic together in a small bowl.
- In a large bowl add cooled green beans, halved tomatoes and basil. Pour in mixture. Toss gently until vegetables are evenly coated. Let chill.
