Quick Corn Chowder
2 tablespoons margarine
2 tablespoons flour
2 cups skim milk
2 cups (1 can) creamed corn
1/2 teaspoon salt (optional)
1/2 small red or green pepper, chopped
Melt margarine over medium-low heat in 2-qt saucepan and stir in flour. Remove from heat and slowly add 1 cup of milk to make a white sauce. Stir in corn, salt, and remaining milk. Heat through and sprinkle with chopped pepper for garnish.
