Asparagus with Dijon Vinaigrette  

Yields: 4 to 6 servings  

Ingredients

24 Fresh asparagus spears  

1 tsp Lemon juice  

3 tsp Dijon mustard  

1/2 tsp Olive oil  

1 dash Coarse black pepper  

Nonstick vegetable spray

Method  

  1. Spray vegetable spray in pan.   
  2. Heat pan on medium heat until hot.   
  3. Lay asparagus in a single layer on bottom of pan.   
  4. While asparagus is cooking, mix the remaining ingredients   
  5. Toss asparagus in pan until evenly cooked.

-Calories: 32        -Fat: 5 grams      -Carbs: 1.5 grams

Chef's Tips

When working with a small amount of liquid, use a small jar with a lid. Put all of your wet ingredients in the jar and screw on the lid.  Then shake it vigorously until the ingredients are well mixed. Remove the lid and pour the liquid over your food.
