Garlic Sun-Dried Tomato Spread
Combine 1.5 ounces garlic (fresh, chopped/crushed/minced) with 3 ounces sun-dried tomatoes in a food processor or blender (small food chopper works well too). Add a wee bit of fresh basil if you like for some great additional flavor.
Spread these ingredients into a straight edged 9-inch round or square pan, add 14 ounces of vegetable or chicken broth. Scratch made, low sodium or reduced fat are good choices.
Bake for 50 minutes 375 degrees F. Top with 4 ounces of crumbled feta cheese and bake for 15 minutes more.
Serve warm with Ciabatta bread or toast or garlic Parmesan toasted French bread.
